Crystal Large
I'm trying to grow large sugar crystals, but I'm having problems. Can you help?
I boiled water and added as much sugar as I possibly could to supersaturate the solution. A small piece of metal was used as the seed. My expectation was that crystallization would begin after the sugar water solution cooled. However, all I ended up with was a sugary syrup (goop). Instead of crystals forming, the entire thing solidified from the top down. Any advice? Exactly how saturated should this solution be? The crystal experts explain that it should be as saturated as possible, but it's not working.
Sounds like you may be a bit oversaturated - meaning that the water doesn't need to evaporate, the solution is dense enough.
Anyway - was the metal near the top? The nucleation site needs to be near where the evaporation is taking place - at the liquid-air interface.
Try a piece of string. And be careful -- if it crystallizes too quickly (say in less than a day) you're seeing the effect of supercooling, not slow evaporation.
